Taco Casserole

I modified this recipe slightly from a recipe I found online.

Ingredients

  • 2 lb hamburger
  • 2 pkgs. taco mix
  • 1 dozen corn tortillas
  • ½ cup flour
  • 2 cans tomato sauce (8 oz)
  • 3 cups shredded cheddar or mixed cheese
  • 2 garlic cloves, crushed
  • 3 cups hot water
  • 1 can refried beans
  • 1 can sliced black olives
  • ¾ cup diced onions
  • ½ cup of sliced jalapeño peppers

Directions:

Brown hamburger, onion, and garlic; drain. Add flour and taco mix. Stir in water and tomato sauce. Simmer until it thickens (about 5 minutes).

Place 3 tortillas in the bottom of a greased 13×9″ casserole dish. Pour 1/3 of the mixture over them, then add a layer of olives, jalapeños (to your liking), and a layer of cheese. Do this 2 more times, for a total of 3 layers. On one of the layers, spread a layer of refried beans on the tortillas. Top with cheese.

Bake in preheated oven at 350° for 1 hour. Let cool before serving. Serve with sour cream and picante.
