Ingredients

  • 3 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 cup margarine
  • 2 eggs
  • 1 cup sugar
  • 1 tsp. lemon extract or juice

In a small mixing bowl beat eggs, add sugar and lemon and beat thoroughly. Blend egg mixture into flour-butter mixture. Chill dough. On lightly floured surface roll dough to 1/8 inch thickness. Bake 375 for 6-8 minutes (take out before the bottoms of the cookies turn brown).

Frosting:

  • 1 stick of margarine partially melted
  • 3 cups powdered sugar
  • Small amount of vanilla flavoring
  • Small amount of milk if needed to make the frosting spreadable
